Description

A fresh and filling strawberry chicken salad with sweet berries, toasted pecans, crumbled feta, and creamy poppy seed dressing. This Panera-inspired salad is perfect for a light lunch or satisfying dinner.


Ingredients

  • 6 cups chopped romaine lettuce (about 2 heads)
  • 2 cups cooked chicken, cubed or shredded
  • 1 cup fresh strawberries, quartered
  • 1 cup fresh blueberries
  • â…“ cup diced red onion
  • ½ cup pecans, toasted and chopped
  • ½ cup crumbled feta cheese
  • Poppy seed dressing, for serving

Instructions

1. In a large bowl, add the chopped romaine lettuce as the base.

2. Top with cooked chicken, strawberries, blueberries, red onion, toasted pecans, and crumbled feta cheese.

3. Drizzle with desired amount of poppy seed dressing.

4. Toss gently to combine and serve immediately.


Notes

For best results, add the dressing right before serving to keep the romaine crisp.

This recipe makes 4 lunch-sized salads or 2 larger dinner portions.

Feel free to customize with mandarin oranges, candied pecans, or goat cheese.
