Description

A vibrant, spiced cucumber salad with a creamy peanut and chili crisp dressing. Crisp cucumbers meet a tangy, nutty, and slightly spicy sauce for a refreshing yet bold flavor balance. Perfect as a side or light meal.


Ingredients

4 medium cucumbers, thinly sliced
2 tablespoons creamy peanut butter
2 tablespoons toasted sesame oil
1 tablespoon chili crisp (adjust for spice)
1 tablespoon rice wine vinegar
2 teaspoons tamari or soy sauce
1 clove garlic, minced
1 teaspoon honey or maple syrup
Handful fresh cilantro, chopped
1 lime, juiced
1/4 teaspoon red pepper flakes (optional)


Instructions

Thinly slice cucumbers and place in a large bowl
In a small bowl, whisk together peanut butter, sesame oil, chili crisp, rice vinegar, tamari, garlic, honey, and lime juice
Toss cucumbers with dressing until evenly coated
Sprinkle with cilantro and red pepper flakes
Serve chilled or at room temperature


Notes
