Ingredients
12 oz orzo pasta
1.5 lbs skinless chicken breast
2 cups broccoli florets
1/2 cup Caesar dressing
1/4 cup basil pesto
2 cups croutons
1 cup grated Parmesan cheese
1 tbsp olive oil
1 tbsp lemon juice
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Instructions
Cook orzo according to package instructions, drain, and cool
Toss chicken with olive oil, garlic powder, salt, and pepper. Grill or pan-sear until cooked through
Preheat oven to 400°F (200°C). Roast broccoli on a lined baking sheet for 15-20 minutes until tender
In a large bowl, combine cooled orzo, roasted broccoli, Caesar dressing, pesto, and lemon juice
Top with cooked chicken, croutons, and Parmesan cheese. Mix gently to combine
