Description
A warm and inviting one-pan dish combining sautéed chicken, sweet pineapple, and tender rice, perfect for family dinners.
Ingredients
- 1 lb chicken breast, diced
- 1 cup pineapple chunks (fresh or canned)
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- Soy sauce to taste
- Salt and pepper to taste
- Olive oil for cooking
Instructions
1. Heat a drizzle of olive oil in a large pan over medium heat.
2. Add the diced chicken and cook until browned, stirring occasionally.
3. Toss in the diced onion, minced garlic, and bell pepper, cooking until softened.
4. Stir in the rice and toast for 1-2 minutes.
5. Pour in the chicken broth, pineapple chunks, soy sauce, and season with salt and pepper.
6. Bring to a boil, then cover and reduce heat to a simmer.
7. Let cook for 15-20 minutes until the rice is tender and liquid is absorbed.
8. Fluff the rice with a fork and serve warm.
Notes
Can be made ahead of time and stored for up to 3 days.
Feel free to swap ingredients based on your preferences, such as using brown rice or adding more vegetables.
Garnish with green onions or sesame seeds for extra flavor and texture.
