Description
Pineapple Chicken Salad Sandwiches with chunks of chicken, crushed pineapple, grapes, green onions, almonds, and celery in a deliciously creamy dressing. Perfect for croissants or sandwich rolls.
Ingredients
- 4 cups cooked chicken chunks or shredded
- 1½ cups halved red grapes
- 1 cup thinly sliced celery
- 1 cup slivered almonds
- 1 small bunch green onions, thinly sliced
- 1 can (20 oz) crushed pineapple, drained well (reserve 2 tablespoons of juice)
- 8 oz cream cheese, room temperature
- 1 cup mayonnaise
- 1–2 tablespoons reserved pineapple juice
- 1 teaspoon Worcestershire sauce
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
Instructions
1. Combine all the chicken salad ingredients in a large mixing bowl and stir together to combine.
2. In a separate smaller bowl, using an electric mixer, beat the cream cheese until smooth.
3. Add in the mayonnaise, pineapple juice, Worcestershire sauce, garlic powder, salt, and black pepper. Stir together or beat until combined.
4. Pour the dressing into the chicken salad mixture and stir together until mixed well.
5. Cover the bowl and refrigerate for at least 4 hours to allow flavors to blend and chill thoroughly.
6. Serve chilled on croissants, rolls, or your preferred bread.
Notes
This recipe yields about 9 cups of chicken salad. Estimate about 1/2 cup per sandwich.
Nutrition info is based on a 3/4 cup serving and does not include bread.
For best results, soften the cream cheese in the microwave for about 25 seconds before mixing.
Drain pineapple well using a spoon to press out liquid, but be sure to reserve some juice.
Rotisserie chicken is a great shortcut for flavorful and tender chicken.
