Description

A velvety, autumn-inspired soup that celebrates the nutty sweetness of roasted acorn squash, balanced with the earthiness of sweet potatoes and the subtle tartness of crisp apples. This plant-based recipe uses full-fat coconut milk to achieve a luxurious, creamy texture without dairy. 1 medium acorn squash (halved and seeds removed)
1 sweet potato (peeled and cubed)
1 crisp apple (peeled and cored)
1 small yellow onion (peeled and quartered)
3 cloves garlic (peeled and left whole)
3 cups low-sodium vegetable broth
1/2 cup full-fat canned coconut milk
1/4 cup pure maple syrup
1 teaspoon sea salt
1 teaspoon freshly cracked black pepper
1/4 teaspoon red pepper flakes
1/8 teaspoon ground nutmeg
2 tablespoons olive oil
Fresh sage leaves and rosemary for garnish


Instructions

Preheat your oven to 400°F (200°C).
Place the acorn squash halves, cubed sweet potato, apple chunks, onion quarters, and garlic cloves on a large baking sheet.
Drizzle with olive oil and season with salt and pepper; toss until evenly coated.
Roast for 35-40 minutes or until the vegetables are fork-tender and slightly caramelized.
Remove the squash from its skin using a spoon and add the flesh to a large pot or high-speed blender along with the other roasted vegetables.
Pour in the vegetable broth and coconut milk.
Blend until smooth, then transfer back to a pot if necessary.
Stir in the maple syrup, red pepper flakes, and nutmeg, then heat over medium until warmed through.
Serve hot, garnished with fresh sage and rosemary.


Notes

For a thinner soup, add an extra 1/2 cup of broth. Ensure you use canned full-fat coconut milk for optimal creaminess. This soup can be frozen in airtight containers for up to 3 months.
