Description

This rustic, Italian-inspired soup is a quintessential bowl of comfort, perfect for busy days. Combining savory turkey-based Italian sausage, creamy cannellini beans, vibrant carrots, and fresh spinach, this one-pot meal is both nourishing and deeply satisfying. Blending a portion of the beans creates a velvety, natural thickness without the need for excess starch, making it an ideal choice for mindful meal prepping that balances nutrition with ease.

19 oz spicy turkey Italian sausage (crumbled)
1 small onion, finely chopped
4 cloves garlic, minced
1 teaspoon Italian seasoning
1 tablespoon fresh thyme leaves
1/4 teaspoon red pepper flakes
2 medium carrots, sliced into thin rounds
15 oz cannellini beans, rinsed and drained
4 cups chicken stock
5 oz fresh spinach
1/2 cup heavy cream
Sea salt and cracked black pepper to taste


Instructions

Brown the crumbled turkey sausage in a large pot over medium-high heat until cooked through.
Add the onion and carrots, sautéing until the onion is translucent and soft.
Stir in the minced garlic, Italian seasoning, thyme, and red pepper flakes, cooking for about 1 minute until fragrant.
Add the cannellini beans and chicken stock, then bring the mixture to a simmer.
Use an immersion blender to partially pulse the soup to thicken the broth while keeping some beans whole.
Simmer for 10-15 minutes to allow flavors to meld.
Stir in the heavy cream and fresh spinach, cooking just until the spinach has wilted.
Season with sea salt and black pepper to taste and serve warm.


Notes

Use a high-quality chicken bone broth to increase the protein content even further. If you prefer a lighter version, half-and-half or coconut milk can be substituted for the heavy cream. Store leftovers in an airtight container for up to 4 days.
