Description

Easy Dandelion Greens with Garlic is a simple Italian-inspired side dish featuring slightly bitter greens sautéed with olive oil, garlic, and lemon for a healthy Mediterranean-style recipe.


Ingredients

  • 1 pound dandelion greens
  • 2 tablespoons extra-virgin olive oil
  • 3–4 garlic cloves, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon sea salt
  • Juice from 1/2 lemon

Instructions

1. Trim about 1/2 inch off the stems of the dandelion greens and cut them into roughly 3-inch sections.

2. Thoroughly wash the greens in cold water and drain well.

3. Bring a medium saucepan of salted water to a boil and add the greens.

4. Cook the greens uncovered for about 8–10 minutes to reduce bitterness and soften them.

5. Drain the greens in a colander and allow them to cool slightly, then gently squeeze out excess water.

6. Heat the olive oil in a sauté pan over medium heat.

7. Add the sliced garlic and red pepper flakes and cook gently until fragrant, making sure the garlic does not brown.

8. Add the drained dandelion greens to the pan and toss them with the garlic and olive oil.

9. Cook for about 5 minutes, stirring occasionally, until the greens are tender.

10. Transfer to a plate, season with additional salt if needed, and finish with a squeeze of fresh lemon juice before serving.


Notes

Boiling the greens before sautéing helps reduce their natural bitterness and softens the texture.

Avoid browning the garlic as it can become bitter.

Serve with grilled steak, chicken, shrimp, or with crusty bread for a simple Mediterranean-style side dish.
