Ingredients
2 lbs boneless skinless chicken breasts, cut into 1-inch cubes
1.5 lbs baby potatoes, halved
4 large carrots, sliced into rounds
4 celery sticks, chopped
1 yellow onion, diced
3 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
4 cups low-sodium chicken broth
2 tbsp olive oil
1/4 cup all-purpose flour
1/2 cup heavy cream
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Place the chicken, potatoes, carrots, celery, onion, and garlic into the slow cooker.
Sprinkle with dried thyme, rosemary, salt, and pepper.
Pour the chicken broth over the ingredients.
Cover and cook on low for 6-7 hours or on high for 3-4 hours.
In a small bowl, whisk the flour and heavy cream together until smooth to create a slurry.
Stir the cream mixture into the slow cooker during the last 30 minutes of cooking to thicken the broth.
Stir well, garnish with fresh parsley, and serve hot.
Notes
For a lighter version, you can substitute heavy cream with half-and-half or a dairy-free coconut milk. Ensure the chicken pieces are uniform in size to ensure even cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days.
