Description

Tender bite-sized beef and soft potatoes simmer in a rich garlic butter sauce for a comforting, one-pot meal. Perfect for busy weeknights or relaxed weekends.


Ingredients

2 pounds beef stew meat, cut into 1-inch pieces
2 cups baby potatoes, halved
3 tablespoons unsalted butter
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 small onion, chopped
2 carrots, sliced


Instructions

Heat oil in a skillet and sear beef pieces until browned
Sauté onion, garlic, and carrots in the same skillet
Transfer ingredients to a slow cooker
Add potatoes, butter, herbs, and seasoning
Set to low and cook for 8 hours
Stir and let rest before serving
