4 boneless, skinless chicken breasts
1 ½ cups long-grain white rice
2 cups chicken broth
2 tablespoons lemon juice
1 tablespoon lemon zest
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon dried rosemary
1 clove garlic, minced
Salt and black pepper to taste
2 tablespoons unsalted butter (optional)
2 teaspoons olive oil


Instructions

Gently season chicken breasts with salt, pepper, thyme, and rosemary.
In a slow cooker, layer rice at the bottom followed by chicken breasts.
Pour chicken broth over the chicken and rice. Add lemon juice, lemon zest, oregano, and minced garlic.
Stir in butter (if using) and olive oil to enhance richness.
