1 medium sweet onion, diced to 1 inch
2 medium carrots, peeled and sliced into 1/2 inch coins
2 stalks celery, sliced into 1/2 inch coins
2 cups butternut squash, cubed
2 pounds chuck roast, trimmed and cut into 2 inch cubes
2 tablespoons arrowroot powder
2 tablespoons olive oil
2 cloves garlic, minced
1 cup Whole30 compliant beef broth
28-ounce can crushed fire-roasted tomatoes
1 teaspoon Italian seasoning
1.5 teaspoons kosher salt


Instructions

Pat the beef cubes dry and coat lightly in arrowroot powder.
Heat olive oil in a large skillet over medium-high heat and sear the beef cubes until browned on all sides.
Place the onion, carrots, celery, and butternut squash into the base of the slow cooker.
Add the seared beef on top of the vegetables.
In a small bowl, whisk together the beef broth, fire-roasted tomatoes, garlic, Italian seasoning, and salt.
Pour the liquid mixture over the ingredients in the slow cooker.
Cover and cook on low for 6 to 8 hours until the beef is fork-tender.
Stir well before serving to ensure the sauce is thickened and flavors are combined.
