Ingredients
1 pound mild or hot ground Italian chicken or turkey sausage
0.5 pound uncured beef bacon, chopped
1 tablespoon olive oil
1 medium yellow onion, finely diced
3 cloves garlic, minced
24 ounces chicken bone broth
1 head cauliflower, cut into bite-sized florets
3 cups fresh kale, stems removed and chopped
0.25 teaspoon red pepper flakes
1 teaspoon sea salt
0.5 teaspoon cracked black pepper
0.5 cup heavy cream
Instructions
Heat olive oil in a skillet over medium-high heat and brown the ground sausage until fully cooked.
Add the beef bacon to the skillet and cook until crispy.
Transfer the cooked meat to the slow cooker insert.
Add the diced onion, minced garlic, chicken bone broth, red pepper flakes, salt, and pepper to the slow cooker.
Stir well, then cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
Add the cauliflower florets during the last hour of cooking to ensure they stay tender but hold their shape.
Stir in the heavy cream and fresh kale 15 minutes before serving to allow the kale to wilt and the soup to thicken slightly.
Serve hot.
Notes
Ensure all meat is fully cooked before adding to the slow cooker for the best texture.
For a dairy-free version, substitute heavy cream with full-fat canned coconut milk.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently on the stovetop to prevent the cream from separating.
