Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 cup white rice
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon Italian herbs
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Season chicken pieces with salt, black pepper, and paprika.
2. In a skillet, melt butter over medium heat and sear chicken until golden brown, then remove and set aside.
3. In the same skillet, sauté the chopped onion until soft, then add minced garlic and cook until fragrant.
4. Sprinkle flour over the onions and garlic, stirring to combine.
5. Gradually whisk in chicken broth, then add heavy cream and stir until the sauce thickens.
6. Season the sauce with Italian herbs, additional paprika, salt, and pepper to taste.
7. Return the chicken to the skillet and simmer until the chicken is fully cooked and coated in the sauce.
8. Cook the white rice according to package instructions.
9. Serve the smothered chicken and sauce over the rice and garnish with fresh parsley.
Notes
For a spicier kick, add a pinch of cayenne pepper or red pepper flakes to the seasoning mix.
You can substitute heavy cream with half-and-half for a lighter sauce.
