Ingredients
4 cups chopped romaine lettuce
2 boneless, skinless chicken breasts, grilled and shredded
1 cup sweet corn kernels (frozen if needed)
1 cup cooked black beans
2 avocados, diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, chopped
1/2 cup halal-friendly corn tortilla strips
Chipsotle honey dressing (see below):
1/4 cup olive oil
1/4 cup honey
2 chipotle peppers in adobo sauce (ensure non-alcoholic version)
Juice of 1 lime
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
Instructions
Chop romaine lettuce into bite-sized pieces
Grill chicken breasts to 165°F, then shred with two forks
In a large bowl, combine lettuce, grilled chicken, corn, black beans, avocado, red onion, cilantro, and tortilla strips
Whisk together dressing ingredients until smooth
Pour dressing over salad and toss gently
Serve immediately for fresh texture or chill for 15 minutes before serving
Notes
Replace adobo sauce with pureed chipotle peppers if using homemade for guaranteed no alcohol
Add grilled chicken thighs for heartier texture
