Description

High-protein Southwest Chicken Wraps packed with seasoned chicken, fresh vegetables, and creamy Southwest sauce. Ready in 20 minutes and perfect for meal prep.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 4 large flour tortillas (10-inch)
  • 1 cup romaine lettuce, shredded
  • 1/2 cup corn kernels (fresh or canned, drained)
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup Greek yogurt (for Southwest sauce)
  • 2 tbsp mayonnaise (for Southwest sauce)
  • 1 tbsp fresh lime juice (for Southwest sauce)
  • 1 tsp honey (for Southwest sauce)
  • 1/2 tsp chipotle powder, adjust to taste (for Southwest sauce)

Instructions

1. In a small bowl, combine chili powder, cumin, garlic powder, onion powder, salt, and pepper. Coat chicken strips evenly with the spice mixture.

2. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes, flipping halfway, until golden brown and cooked through to 165°F. Let rest for 5 minutes.

3. In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, honey, chipotle powder, and salt until smooth. Adjust seasoning to taste.

4. Warm tortillas in a skillet for 30 seconds per side or microwave briefly until pliable.

5. Lay tortilla flat, spread Southwest sauce down the center, and layer with lettuce, chicken, corn, black beans, tomatoes, red onion, avocado, and cilantro.

6. Fold bottom up, tuck in sides, and roll tightly. Slice in half and serve or wrap for later.


Notes

For meal prep, leave out avocado and tomatoes until ready to eat. Store sauce separately to avoid soggy wraps.

Wrap tightly in foil or plastic wrap and refrigerate for up to 3 days.

Use rotisserie chicken for a quicker option.

Substitute gluten-free tortillas if needed.
