Description

These spinach stuffed chicken breasts are loaded with cream cheese, fresh spinach, and Parmesan cheese for a flavorful and satisfying dinner.


Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 1/2 cups chopped fresh spinach
  • 1 teaspoon minced garlic
  • 1/2 teaspoon red pepper flakes

Instructions

1. Preheat oven to 375 degrees F.

2. Place the chicken breasts on a cutting board and drizzle with oil.

3. In a small bowl, combine the paprika, 1/2 teaspoon salt, garlic powder, and onion powder. Sprinkle evenly over both sides of the chicken.

4. Use a sharp knife to cut a pocket into the side of each chicken breast. Set aside.

5. In a mixing bowl, stir together the cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper flakes, and remaining 1/2 teaspoon salt until well combined.

6. Spoon the spinach mixture evenly into each chicken breast pocket.

7. Place the stuffed chicken breasts in a 9×13 baking dish.

8. Bake uncovered for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees F.


Notes

Be careful not to cut all the way through when creating the pocket in the chicken.

Secure with toothpicks if needed to keep the filling inside while baking.

For extra browning, broil for 2–3 minutes at the end of cooking.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
