Description

A refreshing and colorful spring roll-inspired salad loaded with crisp vegetables and tossed in a creamy, flavorful peanut dressing for a quick and healthy meal.


Ingredients

  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup thinly sliced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 2 tablespoons chopped roasted peanuts
  • 2 tablespoons rice vinegar
  • 2 tablespoons smooth peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh lime juice
  • 1 garlic clove, minced

Instructions

1. In a large bowl, combine the shredded cabbage, carrots, bell pepper, cucumber, cilantro, and mint.

2. In a small bowl, whisk together the rice vinegar, peanut butter, soy sauce, honey, sesame oil, lime juice, and minced garlic until smooth.

3. Pour the peanut dressing over the salad and toss gently to coat evenly.

4. Sprinkle the chopped roasted peanuts over the top.

5. Serve immediately and enjoy.


Notes

For added protein, top with cooked shrimp, grilled chicken, or tofu.

If you prefer a thinner dressing, whisk in 1–2 tablespoons of water until desired consistency is reached.

This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
