A creamy, smoky, and refreshing summer salad that combines grilled street corn with crisp cucumbers, zesty lime, and a hint of spice for the ultimate warm-weather side dish.
Ingredients
- 2 cups grilled corn kernels (about 3 ears of corn)
- 1 large English cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 1/3 cup crumbled feta or cotija cheese (optional)
Instructions
1. Brush corn with oil and grill over medium-high heat until lightly charred, then let cool and slice kernels off the cob.
2. Dice the cucumber into bite-sized pieces and finely chop the red onion, soaking the onion in cold water for 10 minutes if you prefer a milder flavor.
3. In a small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper until smooth.
4. In a large bowl, combine grilled corn, cucumber, red onion, and cilantro.
5. Pour the dressing over the mixture and gently toss until evenly coated.
6. Fold in the crumbled feta or cotija cheese if using.
7. Chill the salad for about 30 minutes before serving to allow the flavors to meld.
Notes
This salad can be made with fresh grilled corn or sautéed frozen corn if short on time.
Adjust the spice level by adding a pinch of cayenne or diced jalapeño.
For a lighter version, substitute Greek yogurt for the sour cream.
Best served chilled and enjoyed within 24 hours for maximum freshness.
