Description

These gourmet stuffed mushrooms combine earthy caps with a sweet and tangy mixture of fresh peaches, creamy goat cheese, and savory elements, perfect for any gathering or special occasion.


Ingredients

12 large white mushrooms
1 cup fresh peaches, diced
1/2 cup crumbled goat cheese
1/4 cup chopped mushroom stems
1/4 cup panko breadcrumbs
1 tablespoon olive oil
1 teaspoon fresh basil, chopped
Salt to taste
Pepper to taste


Instructions

Preheat oven to 375°F (190°C)
Clean the mushrooms and remove the stems
Set mushroom caps aside on a baking sheet
In a bowl, mix diced peaches, crumbled goat cheese, chopped mushroom stems, panko, basil, olive oil, salt, and pepper
Spoon the mixture into the mushroom caps
Bake for 20-25 minutes, until mushrooms are tender and the mixture is golden


Notes

Mushrooms can be cleaned with a damp cloth or gently rinsed and patted dry
Serve warm as an appetizer or side dish
Peaches can be substituted with ripe stone fruits like nectarines if preferred
