Description

A vibrant and refreshing summer salad that combines the natural sweetness of corn with the creamy richness of ripe avocado and a zesty lime dressing. This dish is perfect for barbecues or light lunches, celebrating the best of peak-season produce.


Ingredients

1 cup fresh sweet corn (about 2 ears, cut off the cob)
1 ripe avocado, diced
1/2 cup cherry tomatoes, halved
1/4 red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 1 lime
1 tablespoon olive oil
Salt, to taste
Ground black pepper, to taste


Instructions

In a large bowl, combine the corn, diced avocado, cherry tomatoes, red onion, and fresh cilantro.
In a small碗 or jar, whisk together the lime juice, olive oil, salt, and black pepper to create the dressing.
Pour the dressing over the salad and gently toss to combine.
Chill the salad for at least 15 minutes before serving, to allow the flavors to meld.
Taste and adjust seasoning if needed before serving.


Notes

For a heartier version, add a can of drained and rinsed black beans.
For extra crunch, top with a handful of radishes or shredded cabbage.
