Description

A refreshing summer tomato sandwich made with creamy herb cream cheese spread and juicy tomato slices on toasted whole-wheat bread. A quick, healthy, and flavorful lunch ready in just 10 minutes.


Ingredients

  • 2 ounces cream cheese, at room temperature
  • 1 tablespoon low-fat plain Greek yogurt
  • 1 tablespoon sliced fresh chives
  • 1 tablespoon chopped fresh dill
  • 1/4 teaspoon ground pepper
  • Sandwich
  • 2 slices whole-wheat sandwich bread, lightly toasted
  • 4 slices tomato (about 1/4-inch thick)

Instructions

1. In a small bowl, stir together the cream cheese, Greek yogurt, chives, dill, and ground pepper until smooth and well combined.

2. Lightly toast the whole-wheat bread slices until golden while still soft enough to bite through.

3. Spread the herb cream cheese mixture evenly on one side of each slice of toasted bread.

4. Arrange the tomato slices evenly over the spread on one slice of bread.

5. Place the second slice of bread on top with the spread side facing down.

6. Cut the sandwich diagonally and serve immediately.
