Description
Juicy boneless skinless chicken breasts slow-cooked in a sweet and savory pineapple sauce. A tender, tropical-inspired main course bursting with island flavor, perfect for an easy weeknight dinner or family gathering.
Ingredients
4 boneless, skinless chicken breasts (about 2 pounds)
1 cup pineapple juice
1 cup diced pineapple (fresh or canned)
1/2 cup soy sauce
1/4 cup brown sugar
2 cloves garlic, minced
1 teaspoon ground ginger
1/4 teaspoon black pepper
Optional: chopped bell peppers, red pepper flakes, or sliced green onions for garnish
Instructions
1. Add pineapple juice, diced pineapple, soy sauce, brown sugar, garlic, ginger, and black pepper to the crockpot.
2. Place chicken breasts into the slow cooker, reserving any excess marinade.
3. Cover and cook on low for 6-8 hours, or until chicken is tender and reaches a minimum internal temperature of 165°F (74°C).
4. Optional: Stir in chopped bell peppers 30 minutes before cooking is complete.
5. Allow chicken to rest 10 minutes before slicing. Discard any excess juices, then serve with remaining sauce.
Notes
Use fresh pineapple for a brighter flavor if available.
Add red pepper flakes for extra heat.
Thicken sauce with cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) if desired.
Store leftovers in an airtight container up to 3 days in the fridge.
