Description

Ingredients

1.5 lbs sweet potatoes, peeled and cut into 3/4 inch cubes
1 large onion, finely chopped
1 tablespoon fresh ginger, minced
3 cloves garlic, finely chopped
2 tablespoons olive oil
2 teaspoons ground paprika
1 teaspoon ground cumin
1.5 teaspoons kosher salt
15 oz can black beans (with liquid)
14.5 oz can fire-roasted diced tomatoes
4 cups vegetable broth
1/4 cup fresh cilantro for garnish


Instructions

Heat olive oil in a large stockpot over medium heat.
Add the onion and sauté until translucent, about 5 minutes.
Stir in the minced ginger, garlic, paprika, and cumin, cooking for 1 minute until fragrant.
Add the cubed sweet potatoes and stir to coat them in the spices.
Pour in the vegetable broth, black beans (with their liquid), and fire-roasted tomatoes.
Bring to a boil, then reduce heat to low and cover.
Simmer for 20 to 25 minutes, or until the sweet potatoes are fork-tender.
Use a potato masher or immersion blender to slightly thicken the soup to your desired texture.
Season with additional salt if needed and serve warm topped with fresh cilantro.


Notes

For a smoother consistency, remove about one-third of the soup and blend it in a separate blender before returning it to the pot. Store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
