Ingredients
1/2 red onion, coarsely chopped
2 cloves garlic
1 chipotle chile in adobo plus 2 tbsp sauce
3 tbsp vegetable oil
1 lime, juiced
1 tsp dried oregano
1/2 tsp ground cumin
1 lb boneless skinless chicken breasts
Kosher salt and black pepper to taste
1 tbsp unsalted butter
1 cup basmati rice, rinsed
1/2 tsp kosher salt
2 limes, juiced
1 tbsp fresh cilantro, chopped
2 tbsp neutral oil
1 yellow onion, chopped
3 cloves garlic, finely chopped
2 (15.5-oz) cans black beans, rinsed
Instructions
Blend red onion, garlic, chipotle, adobo sauce, oil, lime juice, oregano, and cumin to make the marinade. Marinate chicken for at least 30 minutes, then grill or pan-sear until cooked through and slice.
In a saucepan, melt butter, add rice, water, and salt. Bring to a boil, cover, and simmer for 15-20 minutes. Stir in fresh lime juice and cilantro once cooked.
Sauté yellow onion and garlic in oil, add black beans, and season with salt. Cook until beans are heated through.
Divide rice into bowls, top with chicken and black beans, and serve garnished with desired salsas.
