Description

The Viral TikTok Lasagna Soup has taken the internet by storm with its innovative twist on the classic Italian dish, combining the flavors of lasagna in a comforting, hearty soup form.


Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3–4 cloves garlic, minced
  • 1 lb lean ground beef
  • 1.5 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 jar marinara sauce (24 oz)
  • 1 can diced tomatoes with juices (14.5 oz)
  • 1/4 cup water
  • 10 oz lasagna noodles
  • 1 ½ cups cottage cheese
  • 1/2 cup shaved parmesan
  • 1/2 cup shredded mozzarella cheese
  • 1 cup spinach, chopped
  • Optional garnish:
  • 1/2 cup cottage cheese
  • 2 tbsp chopped basil

Instructions

1. In a large sauce pot or Dutch oven, heat to medium heat. Add olive oil and heat until fragrant. Add the diced onion and garlic, sauté for 3-4 minutes.

2. Add ground beef and mix together. Cook for 4-6 minutes until browned.

3. Stir in Italian seasoning, salt, pepper, and tomato paste. Combine well with the beef mixture.

4. Pour in beef broth, marinara sauce, diced tomatoes with juices, and water. Stir to combine.

5. Break lasagna noodles in half and add to the pot, ensuring they are covered with liquid. Cover and let boil for 12-15 minutes, stirring occasionally to prevent sticking.

6. Once noodles are tender, stir in cottage cheese, parmesan, mozzarella, and chopped spinach. Cook until spinach wilts.

7. Serve warm, garnished with a dollop of cottage cheese and chopped basil, if desired.


Notes

Once you add the pasta noodles, be sure to stir occasionally to prevent them from sticking together, especially since lasagna noodles are large and can clump.

Small curd cottage cheese like Country Fresh works great in this recipe.

Store leftovers in an airtight container in the refrigerator for 3-4 days.
