Ingredients
1 small seedless watermelon, cubed
2 large tomatoes, diced
1/4 red onion, thinly sliced
1/4 cup fresh basil, chopped
1/2 cup crumbled feta cheese (use halal-certified if required)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
Pinch of salt
Freshly ground black pepper
Instructions
Cube watermelon and set aside.
Dice tomatoes and slice red onion.
In a large bowl, combine watermelon, tomatoes, and red onion.
In a small bowl, whisk olive oil, balsamic vinegar, and honey to make dressing.
