Description

Golden zucchini halves filled with aromatic ground beef, rice, and spices. A wholesome, balanced dish blending garden-fresh texture with hearty protein, baked to perfection.


Ingredients

Scale

2 large zucchinis
1 lb lean ground beef
1 cup cooked white rice
1/2 cup chopped onion
2 cloves garlic, minced
1 tbsp olive oil
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 tbsp tomato paste (optional)
1 tbsp chopped fresh parsley (optional)


Instructions

Preheat oven to 375°F (190°C)
Cut zucchinis in half lengthwise and hollow out flesh to form boats
Place in baking dish and lightly brush with oil
In skillet, cook beef over medium heat until browned; drain excess fat
Add onion, garlic, olive oil, paprika, oregano, salt, and pepper; cook 5 minutes
Stir in rice and tomato paste (if using). Mix well
Fill zucchini boats with mixture and bake 25-30 minutes until tender


Notes

Soak zucchinis in salted water 10 minutes before baking to reduce moisture
For non-beef version: substitute with halal-certified plant-based meat
Add 1/2 cup shredded carrots for extra sweetness
Cover with foil during baking to prevent overdrying
